Oregano Quinoa and Spinach Muffins

Preparation time: 10 minutes 
Cooking time: 35 minutes 

1 cup quinoa  
2 cups water
1 cup spinach, torn  
2 spring onions, chopped   
2 eggs, whisked  
¼ cup parmesan cheese, grated  
½ teaspoon garlic powder  
Sea salt and black pepper to the taste  
2 teaspoons oregano, dried  
Cooking spray  

Put the water in a pan, heat up over medium heat, add the quinoa, bring to a simmer, cook for 10 minutes, take off the heat, fluff with a fork and transfer to a bowl.  
Add the rest of the ingredients except the cooking spray and stir well.  
Grease a muffin tin with the cooking spray, divide the quinoa and spinach mix, introduce in the oven at 350 degrees F and bake for 25 minutes.  
Serve the muffins warm for breakfast.
