Ingredients:
tablespoon Greek seasoning
A pinch of salt and black pepper
tablespoon capers
tablespoon olive oil
4 spring onions, chopped
garlic clove, minced
teaspoons basil, chopped
teaspoons oregano, chopped
cup brown rice
cups chicken stock
¼ cup kalamata olives, pitted and sliced
¼ cup sun-dried tomatoes, chopped
tablespoons lemon juice
teaspoons parsley, chopped
pound chicken breast boneless, skinless and cubed
Directions:
Heat a saucepan with the oil over medium heat, add the chicken and brown for 2-3 minutes.
Add Greek seasoning, salt, pepper and the garlic, stir and cook for 3 minutes more.
Add the capers, spring onions, basil, oregano, rice, stock, olives, tomatoes, and lemon juice, stir, bring to a boil and simmer for 30 minutes.
Add the parsley, stir, ladle the soup into bowls and serve.
