Ingredients:
3 medium chicken breasts, skinless, boneless and cut into thin strips
4 ounces green cabbage, shredded
5 tablespoon extra virgin olive oil
Salt and black pepper to taste
2 tablespoons sherry vinegar
tablespoon chives, chopped
¼ cup feta cheese, crumbled
¼ cup barbeque sauce
bacon slices, cooked and crumbled
Directions:
In a bowl, mix 4 tablespoon oil with vinegar, salt and pepper to taste and stir well. Add the shredded cabbage, toss to coat and leave aside for now.
Season chicken with salt and pepper, heat a pan with remaining oil over medium high heat, add chicken, cook for 6 minutes, take off heat, transfer to a bowl and mix well with barbeque sauce.
Arrange salad on serving plates, add chicken strips, sprinkle cheese, chives and crumbled bacon and serve right away.
